Roasted Chicken with Cauliflower and Broccoli
4 whole chicken legs, 2 Tbsp extra virgin olive oil, 2 cups cauliflower florets, 2 cups broccoli florets, 10 cloves peeled garlic, smashed;
Salt and pepper to taste.
Preheat oven to 400 degrees. Brown chicken in a skillet with skin-side down. Transfer chicken, cauliflower, and garlic to an oven-safe dish and bake for 35-40 minutes.
