Crispy Sauteed Kale with Cranberry and Pine Nuts: A gloriously green kale salad with some added sweetness and richness from the berries and nuts.
Ingredients: Curly kale, washed and cut with leaves removed from stem, 1 Tbsp olive oil, 2 tsp minced garlic, 2 Tbsp pine nuts, 3 Tbsp dried cranberries, Salt and pepper to taste.
Instructions: Heat the olive oil over medium-high heat and quickly saute the garlic. Add the kale and cook for a couple minutes in the pan. Remove while still crisp (don't wilt the kale) and toss in a large bowl with pine nuts and dried cranberries. Season with salt and pepper to taste.
